Incredibly delicious and aromatic dish. It would seem – ordinary vegetables, and what a result! Try it and we are sure that you will return to this recipe more than once.
Time for preparing: 35 minutes
Pepper cut into thin wide strips. Divide eggplant lengthwise into four parts and finely chop. Zucchini and zucchini cut into thin slices.
For the sauce, mix the vinegar and mustard in a small bowl. Gradually add olive oil. Add basil, thyme and garlic, mix well. Salt and pepper to taste.
Hint: sauce for vegetables can be prepared in advance (the day before cooking). In this case, cover it with a lid and refrigerate.
Preheat oven to 230 degrees. Put onions and the next six ingredients in a large bowl; season with salt and pepper. Add sauce and mix well.
Put the vegetables on a baking sheet. Bake for about 35 minutes, until they are soft and covered with a golden crust.
