Cook the pasta according to the package instructions. Drain, pour oil and while set aside.
Preheat oven to 180 degrees.
Grease a baking sheet with butter and until it is set aside. Bring the milk with onions, garlic, bay leaf, thyme and mustard to a boil over medium heat. After that, remove the pan from the heat and let the milk brew and soak up all the flavors.
Place 2 tablespoons of butter and flour in a large saucepan. Cook over medium heat, stirring for 2-3 minutes. Then pour in the milk and cook for another 5 minutes, while stirring constantly and vigorously, until the mass thickens. Remove the pan from the heat, add half the grated cheddar and half the parmesan. Stir to melt cheese. Season with salt and pepper to taste.
Pour the pasta with this sauce, add the cheddar (in chunks) and mix well. Now put it all on a baking sheet. Sprinkle with the remaining cheddar and parmesan on top. Bake 25-30 minutes.
