And today I want to talk about the recipe for making pancakes on water using citric acid. These simple pancakes prepare very quickly, so they are called early ripening. Such pancakes can be prepared for breakfast or dinner, and to taste they are almost the same as pancakes made with kefir.
For the preparation of these and other pancakes, it is better to use a thick-walled cast-iron pan. Fritters are baked more evenly in such pans, which also affects the taste.

Pour 7 tablespoons of flour into a dry, deep bowl.
In the flour break one chicken egg. Eggs must first be thoroughly washed.
Then add a tablespoon of sugar and a teaspoon of salt. Pour some soda, literally on the tip of a knife. Stir.
Add water, about 1 cup. Mix the ingredients. It is better to do this with a fork or a special culinary whisk, although you can use a mixer. Stir until all the flour lumps are broken.
When the dough has taken the desired thick consistency, dilute with water in a tablespoon of citric acid. It takes quite a bit – 10-12 crystals. When citric acid is completely dissolved, pour it into the dough. Very quickly stir. Citric acid will extinguish soda and the reaction will go. This can be immediately noticed by bubbles appearing on the surface of the dough.
Now you can bake our pancakes. Pour the sunflower oil into the pan. And pour the dough with a spoon. I have 4-5 pancakes in the pan. For a quicker result, you can cook on two pans. Fry fritters on both sides.
