I love this recipe because it requires a minimum of time. Its peculiarity is that raw minced meat is prepared and stored in the refrigerator, and the right amount of chops is fried as needed.

According to the recipe classics, it is necessary to chop the beef – cut into pieces of 0.5 cm by 0.5 cm. The exercise is very laborious and takes a lot of time. In our family, this recipe has been simplified: we cut the meat into large pieces.

Then pass through a meat grinder with holes of maximum size. It turns out the minced meat is very coarse. Cutlets will be just as tasty and even more juicy.

Mince shuffle in a small saucepan. It is convenient to mix ingredients in it, and store stuffing.

I add flour and starch, add mayonnaise. In the hot season I pour in a tablespoon of vinegar so that the minced meat stays fresh longer.

The resulting mass is mixed until a homogeneous consistency.

It is desirable that the stuffing stood in the refrigerator for 2-3 hours before frying the first meatballs. If such a luxury as time, no, you can start to fry immediately. I did so.

Fry on medium heat for 3-4 minutes on each side.

If you cover the pan with a lid, the cutlets will be cooked faster, but will be less fried.

You can make stuffing billet for 4-5 days. Forcemeat is perfectly stored in the refrigerator, does not flow.

Chopped meatballs can be cooked not only from beef, but also from pork. The only difference is that the pork absorbs the liquid strongly, and more eggs and mayonnaise must be laid. Cutlets will also be very tasty, although the taste is somewhat different.
